update to the question: if I try to achieve orbit at 10K alt after burning straight up to get the apoapsis there it would take a further 400 m/s to achieve it. if I try a 45 degree angle I get the best result, while if I try to go flat near instantly after launch I barely get anywhere. I think at this point I have mis-understood the deltaV map.

A quick rule of thumb for me is 150% orbital speed to land on an airless body. A typical Mun orbit is around 500 m/s, so landing is 750 m/s. #12.

When you're going back to Kerbin on the Map, if you're aerobraking then you can pretty much ignore the numbers that are going into the orbit or escape nodes.
